Definitely the yummiest treat you can prepare and enjoy in less than 40 minutes!! beats the time going to the store to get one!! it's chewy and soft, with a nice crusty top... easy peasy - and not that difficult to finish them off too :)
I used Andes mint thins, one chocolate-brown layer sandwiched between two mint-green layers... but the end result showed no signs of green-coloured mint, instead they all melted into chocolate!! but of course, that did not matter whatsoever :) the fresh minty chocolate was felt in every chewy bite.

Oooh, I love how the chocolate filling oozes out from your cupcakes....almost caramel-like! So this is a hit with your kids, huh? I think this is a crowd favorite. You know, Starbucks sell these mini bite-size brownies....they call it brownie bites. 3 for $3.25 (or $2.75), can't recall. I used to pop these like nobody's business. Can't do that anymore now......
So are you going to be baking more of these?
i'll be baking more of these (as they are soo easy to make) for the girls' school parties (they have lotsa 'em parties!!)... will refrain from baking too often at home...(to be consumed by the girls and moi oh no!! ;-)
